I have found that people fall into one of two camps when having a preference for cookies – chocolate chip or oatmeal. So for those of you that like oatmeal cookies, this recipe is for you! The addition of butterscotch chips definitely takes the sweetness up a notch and even if you’re more of a chocolate chip cookie aficionado, this cookie may have you reconsidering oatmeal … you can’t eat just one!
Butterscotch Oatmeal Cookies
Preheat oven to 375 degrees.
Ingredients:
- 1 cup butter (2 sticks)
- ¾ cup each brown sugar (packed) and white sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 ¼ cups flour
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 1 teaspoon baking soda
- 3 cups quick or old fashioned oats
- 1 package (11-oz) butterscotch flavored chips
Directions:
Beat together butter, sugars, eggs and vanilla until light and fluffy. Slowly add flour, cinnamon, salt, and baking soda. Stir in oats and butterscotch chips. Drop or scoop into ½”-1” spoonfuls onto a parchment covered cookie sheet.
Bake for approximately 8 minutes until just starting to look cooked around the outside and beginning to bubble but still appearing a little undone in the center. Let cool for a few minutes, then place on a cooling rack to cool completely. Enjoy!
