Shortbread is the simplest cookie to make, as there’s really only 3 ingredients – flour, sugar, butter. For a more delicate shortbread, change out the sugar for powdered sugar and they kinda melt in your mouth. Or to level up your cookie even more, add some lemon peel and a little drizzle of lemon glaze and voila! A lemon shortbread cookie that takes you about 10 minutes to make and is oh so delicious!
Lemon Shortbread Cookies
Oven temperature: 350 degrees.
Ingredients for cookies:
- 1 ½ cup butter (3 sticks)
- 1 cup powdered sugar
- 3 cups flour
- pinch of salt
- zest of 1 lemon (I like meyer lemons the best)
Ingredients for lemon glaze:
- 1 ¼ cups powdered sugar
- 1-2 tablespoons fresh lemon juice
- 1 tablespoon whipping cream
Directions:
Beat together the butter, sugar and zest. Slowly add the salt and flour until the dough comes together.
Shape the dough into a disk and wrap in plastic and refrigerate for 1-2 hours.
On a lightly floured surface, roll out the dough to about ¼-½ inch thickness and cut out your favorite shapes. Place cookies on a parchment paper lined cookie sheet and refrigerate for another 15 minutes.
Preheat oven to 350 degrees.
Bake cookies for approximately 12 minutes. Let cool completely on a wire rack.
Directions for lemon glaze:
In a small bowl combine powdered sugar, lemon juice and cream. If too thin, add more sugar, if too thick, add more lemon juice or cream.
Drizzle glaze over cooled cookies.
